Sorry for the complete lack of movie last week (and yesterday)...but unfortunately there were no movies produced therefore no movies blogged.
I snapped this little beauty in the car on the way home from church on Sunday. Nothing too fancy just Scarlett being Scarlett.

Food filled Friday...

Welcome to the first food filled Friday...one day down...a lifetime to go.
Lunch -
Grape tomatoes, fresh basil, mozzarella. 1/2 avocado. Roasted chicken breast.
Snack-
Homemade Hummus and cucumbers -
Hummus -
what you need -
2 cans of chickpeas
2 tbsp tahini
4 tbsp olive oil
4 tbsp fresh lemon juice
4 tbsp water
2 cloves of garlic - minced
2 tsp cumin
2 tsp paprika
Add all ingredients in a food processor or blender and blend until desired consistency. Enjoy!
Dinner - After reading the "phase one" section of the South Beach book I realized that Chris and I are not doing this as a major weight loss program so we decided to skip to the "phase two" regulations by adding a tiny bit of grain to dinners only. We will still be staying away from rice, bread, pasta, and all things sugar.
Baked salmon filets with herbs and a little bit of oil for cooking, quinoa, and roasted brussel sprouts (salt, pepper and a sprinkle of parmesan)

The season of Lent is among us...

Last year Chris and I gave up meat for Lent...it was a challenge but one that we accepted with vigor. This year we are making a complete change in diet. We are starting with the South Beach plan as a guide and hoping that this 40 day season will create healthy and balanced lifelong dietary habits.
So with this decision officially typed into our family records, I declare every Friday, Food Filled Fridays...mostly because 1) I like alliteration, 2) I like food, and 3) I like having something to look forward to posting on Fridays.
Let the good times roll...blog accountability style.
P.S. Our first vegetable overload...hopefully this will become, hummus, roasted asparagus, Mediterranean salad, egg muffins, and all things satisfying and tasty.

Creamy corn chowder...

What you need:
5 pieces of bacon
1 onion (diced)
1 red pepper (diced)
1-2 cloves of garlic (chopped)
1 tbsp butter
2 tsp cumin
3 tbsp flour
4 cups chicken broth
2 red medium sized potatoes (cut into cubes)
1/2 cup heavy cream
1 package frozen corn (or two cans)
1/2 lb sharp cheddar (grated)
fresh black pepper
How to make it:
Cook bacon until crispy and set aside. Add onion, pepper, garlic and butter to bacon grease and saute until onions and peppers are soft. Add cumin, mix thoroughly. Add flour and mix for 1 minute.
Add chicken broth and potatoes. Simmer, covered, until potatoes are cooked through.
Stir in cream and corn and return to a simmer. (I left it at a low heat for about an hour until I was ready to serve.) Right before serving mix in cheddar cheese until melted.
Serve topped with crumbled bacon and fresh black pepper.
Enjoy!!!

My kind of town...

This post has nothing to do with the Becher family of three and everything to do with a much anticipated frozen weekend away in Chicago.
These girls rocked my socks off...
and the snowy Chicago weather convinced me to put them back on (along with every other item of clothing that I brought).
Rebecca was the perfect host...we ate GREAT greasy food,
we saw the sights,
we watched addicting TV, we colored our hair and painted our nails,
we snacked on cookies and ice cream, we drank hot chocolate,
we caught the first signs of snow in our mouths,
we played like school girls,
and most importantly we basked in the beauty of my perfect little God daughter Geneva Claire.
It was THE PERFECT weekend away. Thank you for hosting us Fort family!!!

Theme: Only the good die young
Through the use of food that was picked, plucked or killed before it's maturation, Chris and I offered a menu that challenged the taster to experience the richness of life before its prime.
Menu:
Cocktail hour -
Deviled quail egg served with sliced summer truffle
Appetizer -
Veal roulade (olive tapanade, feta and prosciutto) served atop a pumpkin and sweet potato mash, accompanied by a red wine reduction.
Salad -
Baby spinach, radish, and bacon tossed with a sunflower seed dressing and topped with a poached egg
Soup-
Salan with baby corn and deep fried habanero pepper. Served with handmade roti and cucumber yogurt.
Pallet cleanser -
Ginger and fennel granita
Fish course -
Gravlax served with sliced cucumber, pickled onion, whipped creme fraiche and caviar
Meat course -
Roasted suckling pig marinated in a citrus, cumin sauce. Served with an apple cranberry chutney, brocollini and roasted baby squash.
Dessert -
Lemon poppy seed cookie, served with a scoop of frozen lemon custard, blueberry compote and candied lemon peel.
