With a little bit of this and a little bit of that from my cupboards this made a tasty side dish to our one night a week fish dish.

Quinoa -
1 cup quinoa
2 cups chicken broth
handful of chopped almonds
pinch of cinnamon
handful of dried currants (or dried cherries, or dried cranberries)
Cook quinoa in chicken broth until liquid is gone and quinoa is cooked through.

While quinoa is cooking, toast almonds in pan with a tiny amount of butter and cinnamon. Almonds will brown very quickly so watch closely and stir constantly.

When everything is finished put quinoa and toasted almonds in a bowl with a handful of your dried fruit, add one more pinch of cinnamon and stir.

We cooked a couple fillets of salmon in lemon and pepper, and some asparagus with garlic to finish the meal. Very very tasty. Enjoy!
