Slow cooked tomato chicken

What you need:

Boneless skinless chicken breasts (2-4)
Can of diced tomatoes
One yellow onion
1 tbs minced garlic
1 tbs Oregano
Chedder cheese
Polenta (I used the pre-made kind)


What to do:
Chop onion and saute for approx. three minutes, add can of tomatoes (with sauce), garlic and oregano and let simmer for another three minutes.

Place chicken in slow cooker, dump sauce over the top and cook on low for 6 hours.
When chicken is done, slice your polenta into disks and brown on each side using olive oil.

Serve chicken over the polenta and top with shredded cheese.  Enjoy!

Also, I thought it would be fun to add some pictures of the steps it takes for us to get Scarlett to eat.
This is the process for ONE bite and only one bite...after taking one bite apparently she is stuffed to the brim and can not possibly put anything else in her mouth for the remainder of the evening.

It goes a little like this:
whine, whine, I want a bite
oh...you are going to give me a bite, it is definitely too hot to actually eat
oh the drama, this is just too much work
I can blow on my food...oh well this is just so fun
Let me test it
Oh no...still too hot
Okay...here I go, maybe not, okay, I can do this...let me hold the fork
Well, this isn't so bad...but man am I stuffed

Every night we do the same thing, and every night we think we have a break through, found a food that she really loves, I get excited and quickly plan out a week of meals revolving around that one ingredient and every night she proves that she rules our house with her " I will not eat" ways.
